This recipe is vegan, paleo, gluten-free, sugar-free and dairy-free:
This evening I was craving something cold and sweet. Rather than running out to find some sugar-filled, coconut-milk-based ice cream, I decided to see what I could whip up in my blender. So, I gathered:
1/2 to 1 cup unsweetened almond milk (you could use any milk alternative here)
1 cup of frozen berries (you could also use frozen mango, peach or banana)
1/2 hass avocado (to add creaminess. Don’t worry, you won’t taste the avocado)
5 drops of liquid stevia, or other natural sweetener to taste
Blend this all together for 8 to 10 seconds in the Blendtec (or Vitamix) blender, and Voila! Fruit sorbet! Perfect for that summer-time ice-cream craving!
If you want a chocolate version, try adding a scoop of chocolate flavored, pea-protein powder, such as Orgain.
