Today, Dawn Potter Acupuncture in Clearwater is sharing a recipe based on Chai. “Masala chai” is a traditional Indian beverage made with black tea, milk, water, and a blend of spices. This recipe is vegan, dairy-free, gluten-free, and low-sugar. Various modifications can be made to reduce sugar further or change the type of milk used. For this recipe, you’ll need the following ingredients:

Ingredients
1 ½ cups unsweetened almond milk (or any plant-based milk)
¼ cup chia seeds
1 tsp vanilla extract
1 tsp cinnamon
½ tsp ground ginger
¼ tsp ground cardamom
¼ tsp ground nutmeg
¼ tsp ground cloves
1-2 tsp maple syrup (optional, or use stevia/monk fruit for lower sugar)
⅛ tsp salt
Once you have all your ingredients ready and measured out, you’ll follow these instructions:

Warm the milk slightly in a small saucepan (do not boil). This helps the spices blend better.
Whisk in the spices, vanilla, and sweetener until well combined.
Add the chia seeds and stir well. Let sit for 10 minutes, stirring occasionally to prevent clumping.
Cover and refrigerate for at least 4 hours or overnight.
Stir before serving.
If you want anything extra added, you can top with nuts, unsweetened coconut, or even a few berries.
